French Toast Cheesecake Rollups
Two of my favourites rolled into one amazing breakfast finger food for baby led weaning! French toast is a great baby led weaning breakfast food because it is soft, easy to cook, and contains a sufficient amount of nutrients for breakfast when served with fruit. This healthy breakfast recipe includes a healthier “cheesecake” filling complete with mascarpone cheese and tangy passionfruit!
If you haven’t already noticed, I often use passionfruit in my recipes. If you’re not as familiar with this tropical fruit, picking out a lovely ripe fruit can be tricky. I usually buy the purple variety of passionfruit since that is what is most easily found here in Ireland. When a passion fruit is ripe, it becomes “wrinkly” and may appear a little bumpy. More wrinkles often lead to a sweeter fruit. If you can only find smooth-skinned passionfruit, that’s ok, just give it a few days on the countertop to ripen up.
French Toast Cheesecake Roll-Ups
For these French Toast Cheesecake rollups, we kept it really simple and used only 4 ingredients (not including olive oil for frying).
- Brown Bread
- Eggs
- Marscapone Cheese
- Passion Fruit
How to make these French Toast Cheesecake Roll-Ups
These may be one of the quickest baby led weaning finger foods you’ve ever made. You’ll start by removing the bread crust and rolling the slices flat with a rolling pin. Next, you blend the cheesecake mixture in a small bowl then spread a small amount on each bread slice. Finally, roll the bread up gently (so as not to squeeze out the filling). Now all you need to do is prepare your egg mixture and cook just like you would regular french toast!
Serve these French Toast Roll-Ups with:
Freshly sliced mango (sliced for baby led weaning) and a sprinkle of cinnamon and sugar for older kids or adults.
