This is by far, the BEST mac and cheese I have ever tried and I've tried a lot of mac and cheese. The secret is in the sauce! Ok so its cauliflower but seriously, it makes this sauce so deliciously creamy without having to add a tonne of butter. SUPER easy, totally delicious and perfect for baby led weaning, toddlers, kids of all ages and even for Mums and Dads too! 👶🏻+🧒🏼+👩‍👦⁠

Today I told Oscar that he will be going back to school (hopefully) on Monday and he completely burst into tears. 😭😭😭 I've gone from being the worst teacher to the BEST teacher he has ever had. Although I think he only said that today because of the thought of going back to school in the first place 🥰⁠

I really felt so sorry for him. He hasn't been to school since before Christmas (2 months ago now). No friends to play with, no visits with his grandparents. He's at home, being so patient and good while I fluster around like a crazy Momma trying to get my shit done. Even the poor dog looks like he's throwing in the towel. 🐶⁠

Today we spent an hour drawing a house. We made nachos and cheese. Did an hour of school work and the rest of the time he was on his iPad. I know i'm not alone because every Momma I speak to has said the same thing. ⁠

I just want to throw him a huge party for his birthday next month and invite all his pals and let them eat all the cake. Laugh so hard he can't stand up and watch him have fun with people that aren't us! Even though we are really nice he just needs other people! ⁠

He saw this photo of him and his dog today and asked if we could make these Raspberry and Coconut Creams tomorrow so we are! These ones are made using frozen blackcurrants instead of raspberries which are DELICIOUS!!!!⁠

THE BEST (and I’m not exaggerating here) Fish Pie recipe in the world EVERR! 🌍🐟⁠

It’s National Fish and together with @donegalcatchireland we are bringing you recipes to encourage you to eat more fish!⁠
⁠
This recipe uses the frozen natural range of fish from @donegalcatchireland - salmon, whiting and haddock fillets which can all be cooked in the recipe from frozen! ⁠
⁠
You can make this pie into mini-pies for individual kiddie portions using ramekin dishes. I find this is always a great way to serve fish to kids….make it individual. Fish Pie also freezes really, really well, so double up the recipe and make lots for those busy days, when life just calls for pie.⁠

Serves 2 adults + 2 children⁠
⁠
Splash olive oil⁠
1 medium white onion diced⁠
2 cloves garlic crushed⁠
80g butter⁠
80g plain flour⁠
800ml milk⁠
Black pepper to season⁠
4 fillets frozen haddock fillets⁠
2 fillets frozen whiting fillets⁠
4 fillets frozen salmon fillets⁠
1tsp garlic powder⁠
50g frozen peas⁠
50g frozen sweetcorn⁠
⁠
900g boiled potatoes⁠
60g butter⁠
4tbsp milk⁠
2 spring onions⁠
Black pepper to season⁠
⁠
1. Heat the oil in a pot then fry onion and garlic until it starts to soften. Add butter and stir until melted, then reduce heat to medium.⁠
2. Stir in the flour and cook for about 1 minute before slowly whisking in the milk to from a smooth white sauce.⁠
4. Cut the frozen fish into chunks and add to the sauce, along with the garlic powder, peas and sweetcorn. Bring to a bubble, then leave aside.⁠
5. To make the mash, peel and cut the potatoes into chunks, cover with water, then boil for 10-15 minutes until tender. Drain then mash with the butter and milk, then finely chop the spring onions and season with little black pepper.⁠
6. Pour the fish mixture into an ovenproof dish, then spoon over the mashed potato. Using the back of a fork fluff up the potato so that it crisps up with baking.⁠
7. Bake the pie for 30 minutes until the top of the potato is golden brown.
