Method

  • Preheat oven to 180ºC.
  • Add the flour and baking powder to a bowl and stir, then make a well in the middle.
  • Add the milk, eggs and oil to a jug and whisk until the egg is fully combined. Pour into the flour mixture well and slowly stir, until it is fully combined. Then add the mashed banana and stir well.
  • Divide into muffin pastry cases, and bake for 15 minutes (for mini muffins) and 25 minutes for standard size muffins. Bake until a skewer comes out clean, then leave to cool fully.
  • To make the frosting, whisk together the yogurt, cream cheese and either icing sugar or banana. Leave in the fridge for about an hour to thicken.
  • To serve, top the muffin with frosting, dip in desiccated coconut and decorate with broken chocolate chips and orange peel nose.
