Looking for healthy snack ideas? You need to try these delicious sugar-free Healthy Carrot Cake Bites! Perfect for pregnant Moms & as a baby snack idea too.

Method

  • Add the oats, pumpkin seeds, coconut (if using), ginger and cinnamon to a food processor and blend until the pumpkin seeds and oats are completely broken apart and resemble a fine flour.
  • Then, add the soaked apricots, chia seeds and carrot and blend again until the apricots and carrot are also broken apart. The dough should start to form into a ball in the food processor.
  • Finally, add the coconut oil and peanut butter to the blender and blend until fully combined.
  • Take a tablespoon of the mixture and roll into a ball, then coat in a little extra coconut if using. Repeat until the mixture is all used. Refrigerate for an hour until set.
  • Store in the fridge until ready to eat!
