Let me introduce one of my favourite healthy snack ideas recipes – Healthy Carrot Cake Bites. The absolute snack recipe for baby led weaning and toddlers. These also have the added bonus of being vegan, and gluten-free. Plus they are also one of the best healthy snacks when pregnant. We know how hungry you can get during this time, and these tasty bites are literally like little mouthfuls of satisfying joy!
When you are looking for healthy snack ideas, we know the healthy part is hard to find. So rest assured that this recipe really brings together lots of great ingredients that will pack a really heathy punch! Plus when it comes to fussy eaters, the small manageable size and the smooth texture will be sure to make them a hit with your little one.
These little balls of joy pack in a lot of healthy and yummy ingredients. This recipe makes healthy snacks easy by combining them into little balls of Carrot Cake bites. All of the ingredients work well for baby led weaning and tiddlers alike, but are also great for pregnant mommas.
Start by adding the oats, pumpkin seeds, coconut (if you are using it), ginger and cinnamon into a food processor. Blend the ingredients together until the pumpkin seeds and oats are completely broken apart and resemble a fine flour. Then, add the soaked apricots, chia seeds and carrot and blend again until the apricots and carrot are also broken apart. The dough should start to form into a ball while still in the food processor. Finally, add the coconut oil and peanut butter to the blender and blend until fully combined.
Take a tablespoon of the mixture and roll into a ball, then coat in a little extra coconut if using. Repeat until the mixture is all used up.
Then refrigerate for an hour until set. You can store these in the fridge until ready to eat!
Yes Momma, they sure are! This is perfect for those little ones with dairy or gluten-free allergies. If you want to make them nut free, simply swap out the nut butter for sunflower butter instead. Or, you could also try tahini which is made from sesame seeds.
