Sugar Free Carrot Cake Bites - Healthy Snack Ideas
Let me introduce one of my favourite healthy snack ideas recipes – Healthy Carrot Cake Bites. The absolute snack recipe for baby led weaning and toddlers. These also have the added bonus of being vegan, and gluten-free. Plus they are also one of the best healthy snacks when pregnant. We know how hungry you can get during this time, and these tasty bites are literally like little mouthfuls of satisfying joy!

Plus when it comes to fussy eaters, the small manageable size and the smooth texture will be sure to make them a hit with your little one.

Carrot Cake Healthy Bites the ingredients
These little balls of joy pack in a lot of healthy and yummy ingredients. This recipe makes healthy snacks easy by combining them into little balls of Carrot Cake bites. All of the ingredients work well for baby led weaning and tiddlers alike, but are also great for pregnant mommas.
- Oats: These enhance provide a dose of fibre, vitamins, minerals, and antioxidants, plus they keep belly’s fuller for longer.
- Pumpkin seeds: They have an exceptional number of vitamins and minerals, particularly nutrients that are essential for your baby’s development, like vitamin K and copper, iron, and magnesium. Plus these little seeds are rich in magnesium and zinc which both play a role in your toddlers sleep and mood.
- Desiccated coconut: Desiccated coconut is an ideal source of healthy fat that contains no cholesterol and contains selenium, fibre, copper and manganese.
- Chia Seeds: Chia seeds are a superfood that is excellent for your child. They are loaded with Omega-3 fatty acids, antioxidants and fibre. The essential fats help with brain development, eyesight, and concentration and boost the immune system.
- Carrot: Naturally sweet and high in fibre, carrots are a great source of vitamin A and beta-carotene. Vitamin A is vital for vision as it forms part of a protein that absorbs light in the eye. It also supports cell growth and is essential in heart, lung and kidney function.
- Dried apricot: Dried apricots contain a generous dose of iron, which helps your toddler’s body produce healthy red blood cells. He also gets a good amount of potassium, a mineral that supports proper muscle and heart function. Dried apricots are a nutritious source of vitamin A, which contributes to the health of your child’s eyes.

How to make Carrot Cake Healthy Bites
Start by adding the oats, pumpkin seeds, coconut (if you are using it), ginger and cinnamon into a food processor. Blend the ingredients together until the pumpkin seeds and oats are completely broken apart and resemble a fine flour. Then, add the soaked apricots, chia seeds and carrot and blend again until the apricots and carrot are also broken apart. The dough should start to form into a ball while still in the food processor. Finally, add the coconut oil and peanut butter to the blender and blend until fully combined.
To form the Carrot Cake bites
Take a tablespoon of the mixture and roll into a ball, then coat in a little extra coconut if using. Repeat until the mixture is all used up.
Then refrigerate for an hour until set. You can store these in the fridge until ready to eat!

Are these healthy snacks vegan?
Yes Momma, they sure are! This is perfect for those little ones with dairy or gluten-free allergies. If you want to make them nut free, simply swap out the nut butter for sunflower butter instead. Or, you could also try tahini which is made from sesame seeds.

Sugar Free Carrot Cake Bites – Healthy Snack Ideas

Ingredients
- 90 g 1 cup oats
- 30 g 1/4 cup pumpkin seeds
- 50 g 1/2 cup desiccated coconut (or an extra half cup of oats for coconut free)
- ¼ tsp ground ginger
- 1 tsp ground cinnamon
- 12 dried apricots soaked in hot water for 10 minutes
- 1 tbsp chia seeds
- 120 g 3/4 cup grated carrot
- 1 tbsp coconut oil
- 4 tbsp smooth peanut butter
- To serve; extra desiccated coconut optional
Method
- Add the oats, pumpkin seeds, coconut (if using), ginger and cinnamon to a food processor and blend until the pumpkin seeds and oats are completely broken apart and resemble a fine flour.
