These mini muffins are the best little weaning recipe for little hands over the holidays. They are super soft and safe recipe for babies 6 months +

Ingredients


Method

  • Preheat oven to 180ºC.
  • Add the flour, baking powder, lemon zest and juice to a bowl and stir.
  • Pour the milk into a jug, then add the eggs, olive oil and maple syrup. Whisk until it is fully combined and smooth. 
  • Make a well in the centre of the flour mixture and slowly pour the milk and egg mixture in stirring well as you do. It should be smooth and silky when you are finished. 
  • Divide the mixture into a lightly oiled mini muffin tin. 
  • Top each mini muffin with a raspberry, then bake for 20 minutes until the muffins have risen and are fully set. A skewer should come out clean.
  • Leave on a plate with a cute note for Santa on Christmas Eve 🎅🏻
