Preheat oven to 180ºC.
Add the coconut milk, dates and cocoa powder to a blender and blend until smooth. Pour into ramekins or small serving glasses, then refrigerate for 2-3 hours until set.
To make the cookies, add the oat flour, peanut butter and maple syrup to a bowl and mix until fully combined.
Remove 8 tablespoons of the mixture and shape these into headstones. Then place onto a baking tray.
Add the cocoa powder to the remaining oat mixture and mix well until it turns chocolatey. Then shape into cookies and place onto a baking tray.
Bake the cookies for 15 minutes, then leave to cool fully. Write RIP using melted chocolate on the gravestone cookies.
To serve the pots, break the chocolate cookies on top of the mousse, then drizzle over any remaining melted chocolate.
Add a headstone to each cup then serve
