Heat the water in a saucepan until it starts to bubble, then turn off the heat.
Slice 1/2 of one lemon, then add to the pot. Grate in the ginger and add the chamomile teabags and add in 4-6 sprigs of the thyme leaves.
Put the lid on the pot and leave to simmer until the water starts to cool down.
Meanwhile, slice the remaining lemons and add to a jar along with a few sprigs of extra thyme.
When the drink has cooled down, strain away the warmed lemons and teabags then discard. Pour the liquid into the jar over the lemons and refrigerate.
To serve, dilute the mixture with 50% water, warm for older children and cool for younger little ones. You can also freeze into pops too.
