This is a really good snack recipe for kids. They are perfect as a no bake mid-morning or afternoon no bake snack and energy boost to busy little kids.

Ingredients

Method

  • Place the oats, chickpeas and coconut to a food processor and blend until the mixture resembles fine breadcrumbs.
  • Add the coconut oil, maple syrup, lemon and açai powder then process until fully combined.
  • Add the blackberries to the food processor and blend until the mixture turns purple. If it is too wet at this stage stir in a little extra desiccated coconut.
  • Using a tablespoon, divide the mixture. Roll into balls, then dip in a a little extra coconut.
  • Refridgerate for 2-3 hours before serving.
