This is a really good snack recipe for kids. They are perfect as a no bake mid-morning or afternoon no bake snack and energy boost to busy little kids.
Place the oats, chickpeas and coconut to a food processor and blend until the mixture resembles fine breadcrumbs.
Add the coconut oil, maple syrup, lemon and açai powder then process until fully combined.
Add the blackberries to the food processor and blend until the mixture turns purple. If it is too wet at this stage stir in a little extra desiccated coconut.
Using a tablespoon, divide the mixture. Roll into balls, then dip in a a little extra coconut.
Refridgerate for 2-3 hours before serving.
