This is a traditional Irish Soda Bread recipe made into muffins and even better, it is done 4 different ways. A taste of Ireland in every single bite.

Ingredients


Method

  • Pre-heat oven to 180ºC.
  • In a large mixing bowl mix together flour, baking soda and caraway seeds. Stir in the buttermilk until the dough comes together, then empty onto a lightly floured work surface. 
  • Gently knead very, very slightly (over kneaded bread is tough!), then cut into 16 parts. 
  • Roll each part into a ball then press down slightly and place into a floured muffin tin.
  • Leave as plain soda bread or add cheese and chive, frozen berries or fresh berries.
  • Bake for 25-30 minutes until golden.
  • Serve with butter and jam, cream cheese or your favourite topping.
