A delicious soft and super healthy cookie for blw. These Chickpea Cookies contain less than 1/3 teaspoon of maple syrup & are sweetened with bananas!
Ingredients

tin chickpeas drained

large bananas

tablespoons
maple syrup

teaspoon
baking powder

peanut butter

melted butter
or coconut oil for vegan

Method
Pre-heat oven to 180ºC.
Add all of the ingredients to a food processor and process until smooth.
Spoon a heaped tablespoon of the mixture to a baking tray lined with parchment paper, repeat until all the mixture is gone.
Sprinkle over a little of the finely crushed topping (I used crushed nuts) then bake for 15 minutes until the cookies are golden.
Cool fully before serving.

Recipe Notes & Tips
For even healthier cookies, reduce the maple syrup each time until you are using just banana as a sweetener.
