This January, I have teamed up with Dunnes Stores to fill your cupboards, fridges and freezers with healthy foods your family will truly love. These deliciously soft cookies are made using a very surprising ingredient – the humble chickpea! It took a few tries to get them to the right consistency but these definitely work and my children devoured them so I know I’m onto a winner.
Chickpeas are normally used for more savoury dishes but they work so well as a flour replacement and they pack a punch too! They are an excellent source of iron, are high in fibre, protein and also contain healthy fats.

400g tin chickpeas drained
2 large bananas
2 tablespoons maple syrup
1 teaspoon baking powder
130g peanut butter
30g melted butter (or coconut oil for vegan)
1 tsp vanilla
50g oats
Topping choices: finely crushed nuts or seeds
