Put on the kettle on! Super Healthy Cookies are here and they are the perfect healthy treat to keep you and your family on the straight and narrow this January!

This January, I have teamed up with Dunnes Stores to fill your cupboards, fridges and freezers with healthy foods your family will truly love. These deliciously soft cookies are made using a very surprising ingredient – the humble chickpea! It took a few tries to get them to the right consistency but these definitely work and my children devoured them so I know I’m onto a winner.

Chickpeas are normally used for more savoury dishes but they work so well as a flour replacement and they pack a punch too! They are an excellent source of iron, are high in fibre, protein and also contain healthy fats.

Ingredients

400g tin chickpeas drained
2 large bananas
2 tablespoons maple syrup
1 teaspoon baking powder
130g peanut butter
30g melted butter (or coconut oil for vegan)
1 tsp vanilla
50g oats

Topping choices: finely crushed nuts or seeds

Method

  1. Pre-heat oven to 180ºC.
  2. Add all of the ingredients to a food processor and process until smooth.
  3. Spoon a heaped tablespoon of the mixture to a baking tray lined with parchment paper, repeat until all the mixture is gone.
  4. Sprinkle over a little of the finely crushed topping (I used crushed nuts) then bake for 15 minutes until the cookies are golden.
  5. Cool fully before serving.
