Ingredients

slim French baguette
2
bananas
4
eggs
1
teaspoon
vanilla extract
80
ml
milk of your choice
Rapeseed oil to fry
Fresh blueberries
Drizzle maple syrup for a special occasion
Method
Start by slicing the baguette into small thin slices.
In a bowl mash the banana until it is smooth and creamy. Add the eggs, vanilla and milk and whisk until the eggs have fully broken up.
Place the bread into a large tray and pour over the egg mixture. Leave in the fridge until the bread has fully soaked up all of the liquid.
Heat the rapeseed oil in a frying pan over a medium heat. Fry the bread slices until golden both sides.
Serve with fresh blueberries and for special weekends drizzle over just a little maple syrup.

Soak the bread in the batter overnight so you have everything ready for morning! Eat fresh, don't freeze.
