Super Yummy French Toast with Blueberries
Breakfast doesn’t always have to be cereal, my own kids get so bored with eating porridge every day so especially on weekends so I have to really push myself to try to mix things up a little. However, I don’t want to be in the kitchen cooking forever for breakfast so it has to be quick and really tasty.
A delicious way of getting lot’s of healthy goodness into your little ones by giving them eggs, bread and fruit altogether! French toast style, but refined sugar-free and using only wholesome ingredients.
I photographed this recipe at 5 p.m. and my little ones loved them so much they had them for dessert, we used a teenie drizzle of maple syrup on half and a tiny teenie sprinkle of coconut sugar on the other half.
Super Yummy French Toast with Blueberries

Method
- Start by slicing the baguette into small thin slices.
- In a bowl mash the banana until it is smooth and creamy. Add the eggs, vanilla and milk and whisk until the eggs have fully broken up.
- Place the bread into a large tray and pour over the egg mixture. Leave in the fridge until the bread has fully soaked up all of the liquid.
- Heat the rapeseed oil in a frying pan over a medium heat. Fry the bread slices until golden both sides.
- Serve with fresh blueberries and for special weekends drizzle over just a little maple syrup.
