Helllooooooo everyone and welcome to the nicest recipe of the year (so far)..if I do say so myself. I have some amazing recipe to share with you over the next few weeks and to start I give you Salmon Nuggets. These yummy bites are the perfect baby finger food and are a 100% perfect recipe for baby led weaning too. Served with a dollop of yogurt, lime and coriander sauce, you will end up making these nuggets time and time again.

These nuggets are the perfect baby led weaning finger food for babies.

In the making of the video for this recipe, I messed up a few times with camera settings so I have 6 portions of these in my freezer and we are still not tired of them. Lesson learnt – sound MUST be turned on!

Delicious salmon nuggets that are just perfect for baby led weaning hands. These nuggets are the perfect baby led weaning finger food for babies.

Over the years of talking to so many Mums and Dads it seems that salmon is a fish that parents really struggle to get their children to eat. The challenge was on to create a recipe that would not taste super fishy and would also be a kid winner. These nuggets did just that and I have to say I was pleasantly surprised at how much the kids loved them and they are super quick and easy to make too.

Make ahead and freeze

If you are like me and consider yourself a crazy busy parent, then having food in the freezer is an essential part of eating healthily. Make a double batch of these and freeze right after breading (providing your fish has not already been frozen). When you are ready to use them, just remove from the freezer, defrost and heat in the oven as per the instructions below. It really couldn’t be easier!

Eating on a budget

Eating on a budget is a huge part of family life, especially in our house and when you think ‘Salmon’ you think expensive but shopping the Everyday Savers range from Dunnes Stores really makes a difference. The salmon, limes onions and flour are all part of this range so it really helps when you are feeding a family of 5 hungry mouths.
