Have you heard of a little superfood called beetroot? Well, I’m absolutely obsessed with it! It’s so easy to cook and incorporate into meals for both babies and adults!
Beetroot
Beetroot is a powerhouse in the veg world. Why, you ask? Well let me explain:
- Beetroot contains numerous vitamins that are beneficial for both growing children and adults. Some vitamins found in beetroot are vitamin A, vitamin C, and vitamin B6 which aid the immune system, help us absorb iron and keep our bodies and minds healthy.
- Beetroot consists of vital minerals that our bodies need. The abundant minerals found in beetroot include: iron, folic acid, potassium, magnesium, protein, antioxidants and soluble fibre. All of these are essential in order to maintain a strong and healthy body.
- Beetroot can also help relieve several common ailments that most of us face. These ailments being constipation, fevers and high blood pressure among other things.
- In addition, beetroot also contains a large amount of natural nitrates being that it’s a root vegetable. These nitrates are eventually converted in the saliva and help widen our blood vessels to allow for a greater blood flow around our bodies and to our brains.
‘Beet’ for beetroot meal ideas?
Don’t worry, I’ve got you covered! Beetroot can appear intimidating to a lot of people. It’s hard to look at this veg and easily brainstorm recipe that it would be amazing in if you’ve never had it before. And I can see why…it’s oddly shaped and this not very common deep purple colour. Yikes! To make it easier for everyone I’ve listed 3 of my favourite recipe where beetroot is deliciously incorporated:

Who doesn’t love smoothies? This smoothie contains beetroot which gives it a natural sweet and earthy flavour. Yummm!

Beetroot Pesto Pasta
Speaking of that strange looking veg, there it is! This pasta is a great way to include beetroot in yours and your little one’s meals. The beetroot is blended along with other healthy ingredients to create this amazing purple sauce 🙂
