Very Berry and Beetroot ‘Super Smoothie’
As promised here is another smoothie that I hope you will all love as much as the last one! Thank you to everyone who emailed me and messaged. I’m delighted your little ones and you loved the smoothie so much 🙂 This one is another mostly veggie smoothie and has so much goodness in every sip.
Beetroot is one of my favourite vegetables and has been a firm love of Oscars since he first started weaning. When you cut into a beet and see those amazing colours its apparent that they are packed with goodness. Beetroots are somewhat of a superhero in their own right, they are a rich source of antioxidants, vitamins and minerals as well as being an excellent source of dietary fibre.
Beetroot has a very distinct, earthy taste but did you know that it has more sugar (the good kind) than any other type of vegetable! This gives this smoothie a delicious sweet taste which the little ones love and the balance of flavours makes you wonder if there is actually beetroot in there to begin with for those who just ain’t so sure about this wondrous veg.
Spinach is an excellent source of vitamins and minerals which includes iron (needed for growing little babies). I only added a little fruit as I try to keep my smoothies mostly veggie based; Raspberries, strawberries and kiwi which not only provide a little zing and sweetness but also come with the added benefits of having lots of vitamins and minerals.
On top of all that goodness I added some chia seeds for a little extra calcium and omega-3s, just make sure you drink right away or these little seeds expand and your smoothie will turn into a pudding
I used coconut water because not only is it super delicious it is also boosts hydration which is especially great if your little one has been off food from teething. It also is also packed with nutrients and is perfect addition to making this a ‘SUPER Smoothie’.
Smoothies also make great teething pops. Just make up your smoothie, pour into baby ice-lolly moulds and freeze.
Have a lovely week!
Aileen & Oscar xoxo
