Pancakes and fritters are a brilliant first food for babies. They are soft and super easy to manage. Pancakes can also be packed with lots of goodness from vegetables to fruits and are an easy way to get one extra portion of veggies into your child’s diet. Pancakes are a great dish to make in large batches. I cook mine, then layer them by placing a little piece of parchment paper in between each one. Simply put into a freezer box/sealed lunch box and freeze. To defrost just place in the toaster on the defrost setting, then pop down again on a normal toast settings. So easy and perfect for busy days.

These flourless are just breaming with nutritious ingredients. The more I read and learn about it, the more I want to make pancakes! This is my new perfect start to a day – Quinoa, bananas, eggs, fruit and natural yogurt. Yum!
Rainbow Taco Pancakes

Pea and Spinach Pancakes with Irish Salmon and Mint Yogurt Dip
This recipe is really simple to make and can be made ahead of time. Just reheat the pancakes in a toaster! Even though they look very psychedelic the only colour is from the veggies. I used salmon to top the pancakes as it is high in protein and omega-3. For smaller babies (under 12 months) I would advise using steamed fresh salmon and flake over the top as smoked salmon can be high in salt. The zingy white dip is delicious! (and super simple). It takes all of 1 minute to put all the ingredients into a bowl, give it a mix and hey presto, you’ve got an amazing minty, fresh sauce that kids love.

The chicken filling is cooked over a simmering heat which keeps the meat soft and tender for little ones and you can leave out the chilli powder if you don’t like a little heat, however it’s good to introduce a little spice so babies get a taste for it early.
Healthy Pumpkin Pancakes
Pumpkin is awesome pumpkin is neat, these wheat-free pumpkin pancakes can’t be beat! Ha ha, you’ve got to love a silly jingle, I know my kids do, love jungles that is. But they also love these wheat-free pumpkin pancakes too!

Butternut Squash and Goat Cheese Pancakes
Butternut squash not only tastes great, it is also one of the most nutritious vegetables you can eat. It contains significant amounts of fibre, is rich in vitamins, minerals and antioxidants and if that isn’t enough it is really filling. The combination of butternut squash, goat cheese and rosemary with pancake batter may sound a bit crazy but it really does work and is a yummy snack for your baby.
