Passion Fruit Yogurt and Oat Pancakes

It’s no secret I’m a fan of porridge oats. Delicious, filling and packed full of goodness, really whats not to like? But, giving your baby porridge in the morning can sometimes be crazy messy, so voila…..oat pancakes! Just blend up oats until they resemble a fine flour, then use that as a replacement for flour. Also brilliant for babies with a gluten intolerance too. These pancakes are made using Greek Yogurt and are deeeeeeelciously fluffy.

Pancakes are one of the best first foods for babies starting baby led weaning too. To give you an idea on size, portion the batter into roughly the size of your babies palm when their hand is stretched out flat. Small, but super easy to manage too.

Oat Pancakes with Passion Fruit and Yogurt

Ingredients

150g (1 cup) oat flour
2 teaspoons baking powder
125ml (1/2 cup) milk
125ml (1/2 cup) greek yogurt
1 egg
2 tablespoons melted butter
Rapeseed oil for frying

To serve:
2 passion fruits
Greek yogurt

Method

  1. Add oat flour and baking powder into a large bowl.
  2. In a separate bowl, mix the milk, greek yogurt, egg and melted butter.
  3. Make a well in the flour and slowly whisk in the liquid mixture until completely combined.
  4. Heat a large frying pan over a medium heat. For each batch of pancakes, use about 1 teaspoon rapeseed oil.
  5. Spoon 2–3 tablespoons of batter into the pan. Cook until you see bubbles forming (about 1–2 minutes). Flip over and cook the other side.
  6. Serve pancakes with a dollop of greek yogurt and half of a passion fruit per person.

Recipe Notes

Freeze in an airtight container or freezer bag with not topping. Add a small piece of parchment paper between each pancake. To ear, heat for 15 seconds in microwave or pop in to the toaster!
