Egg Cheese & Spinach Muffins - A Perfect Quick and Easy Meal for your Little ones!
These Egg Cheese and Spinach Muffins are one of the first foods I gave my little boy and he ate them up faster than I could make them! Eggs are one of my favourite first foods for baby led weaning. Not only are they high in protein but they also contain all 9 essential amino acids. These are important, especially if you are a vegetarian! Eggs don’t just stop there, they are a great source of iron which is essential for healthy growth and development. And let’s be honest, eggs are REALLY easy to make and can be cooked in so many different ways to suit you and your baby’s preferences. While eggs have superpowers, when you add Iron-rich spinach and vitamin c packed tomatoes you’re rounding out a nice nutritious meal for your baby.

Introducing first foods and potential allergies
While we hear about egg allergies often, it is actually quite rare to have one. If there is a history of allergies in your family, your baby could be at risk, however, the majority of babies won’t have any issues at all. When introducing allergen foods like eggs, peanuts and tree nuts, dairy and fish we introduce them one per week. This way you can easily identify food that might be problematic for your baby.
When giving your baby egg for the first time, start with a very small piece and increase slowly throughout the week. Keep a note of any signs of allergy like rash or change in bathroom habits and if you do notice anything you can then speak to your doctor. Try not to introduce multiple first foods in the same time frame to avoid confusing any symptoms.

You can’t freeze time, but you can freeze these baby led weaning muffins!
Once you are feeling confident about feeding your baby eggs, you can whip up a large batch of these egg and spinach muffins and store them in the freezer for a quick baby led weaning breakfast. All you’ll need to do is take them out and thaw them for 15 seconds in the microwave. As you move forward in your weaning journey, you will find that having a bunch of healthy homemade weaning foods in the freezer will be life-saving. Seriously though, double batch everything. 🙂

Ingredients needed to make these Egg Cheese & Spinach muffins
All of the ingredients used in this recipe are readily available in your local supermarket and are all really inexpensive too!
- Eggs: high in protein and containing all 9 essential amino acids, eggs are an important part of your little ones diet. They are also a great source of iron which is essential for healthy growth and development.
- Spring Onions: loaded with essential nutrients like Vitamins A, C, B2, these are a great addition to help boost babies immune systems.
- Spinach: spinach is rich in both vitamin K and magnesium, both of which are very important nutrients for bone health.
- Tomatoes: jam packed with vitamin C and full of antioxidants, tomatoes are a great addition to any meal and provide heaps of essential nutrients for your little one
- Mozzarella: this cheese is a great source of probiotics, which are important for gut health and can help support the immune system!

How to make these Egg Cheese & Spinach Muffins
This recipe is guaranteed to ensure empty plates and happy tummies and can be whipped up in a matter of minutes!
To start, you’ll want to crack the eggs into a bowl along with the garlic powder and a little black pepper to season. Keep whisking until the texture is light and fluffy.
Once done, lightly oil a muffin tin and then fill each compartment 3/4 up with the egg mixture. Next, add about 1 tablespoon of spinach to each compartment and add a little sprinkle of spring onion and 1/2 a cherry tomato. To finish up, top with a little grated mozzarella. Make sure to use a spoon to mix the veggies through the egg gently!
Now, simply bake these in the oven for 25 minutes until the egg has fully set. The egg may rise and peak, but will settle back down after you’ve removed them from the oven and left them to cool.
Finally, serve these warm or cold & watch your little one enjoy!
