Super healthy, and doughnuts don’t normally come in the same sentence but here you go, a doughnut recipe that will change your life (if your into doughnuts) and the best part is that these are perfectly healthy for baby led weaning. Only the good stuff here folks!

Recently I bought a super cute mini doughnut tin on Amazon and I have been trying out many, many recipe, tweaking here and there trying to get the balance of flavours just right and most importantly ensure I had a moist, delicious tasting doughnut. I have to say (if I do say so myself) that these are pretty yummy and you will be surprised at how rich and satisfying they are considering the sweetness comes only from the bananas!

Bananas are an incredibly sweet fruit and the riper they are the sweeter they become. They are a wonderful source of both potassium, fibre and vitamin B as well as manganese which is needed for healthy bones.

I used buttermilk in this recipe only because I had ran out of regular milk but it works so well. Buttermilk may sound like it is unhealthy but it actually is surprisingly good for you and according to the nutritional calculation on the carton it contains less saturated fat than regular whole milk. So don’t let them name fool you.

This recipe uses buckwheat flour which is my favourite flour to use. I go through a bag a week of it on pancakes, breads and now doughnuts! Buckwheat is to me one of the tastiest flours and has numerous health benefits including being an awesome source of vitamins and minerals. It is also gluten free and now available in most supermarkets and health stores. Just search ‘buckwheat flour’ on Google to see the wonderful things this flour can do for you and why you need to use it for your family.

I am now in the process of working on delicious frostings and doughnut toppings. Since I don’t eat refined sugar these particular ones were dipped in a raw coconut sugar with cinnamon which was AMAZING! I love them served like this for an occasional Friday baby treat.

If you can get your hands on a mini muffin tin I would highly recommend one. They are the ideal size for little hands and they look so super cute when they come out of the oven. My tin cost less than €10 including delivery and it was worth every cent because i’ll be using it for many, many years.

Be warned! these doughnuts are highly addictive and there are lots more variations in recipe to come :)))

Ingredients


Method

  • Pre-heat oven to 220ºC
  • Add the bananas, buttermilk, coconut oil and vanilla to a food processor and process until it is smooth and creamy with no lumps.
  • With the processor still on, slowly add the flour, baking powder and baking soda and mix until it is fully combined.
  • Pour the batter into a lightly oiled doughnut tin.
  • Bake in the oven for 8-10 minutes or until the top of the doughnuts are golden, then remove from the oven and leave on a wire wrack until cooled enough to eat.
  • To decorate,, melt the additional coconut oil then using a pastry brush, lightly brush the tops and sides of the doughnuts until covered.
  • Mix the coconut sugar with the cinnamon then sprinkle over and eat!

Love your two books Aileen, and the new website ????
This recipe was one of the first I’ve ever tried and though I’ve made it many times now the doughnuts keep coming out of the oven really stodgy and not puffed up and crispy looking like yours. I’m an experienced baker but this one has me baffled. Any advice? Thank you, Jen

I have tried this twice now and can’t get the doughnuts to cook on the inside. They go brown in the 8-10mins but don’t cook and collapse when I take them out of the oven. I have tried leaving them in longer but in half an hour the inside still wasn’t cooked and the outside over cooked. I’m really disappointed as I bought doughnut moulds especially for this. Any advice?
