Happy Pancake Tuesday! If there is one things I love to cook it’s pancakes! In this case, sweet crepes. Pancakes are one of the best ideas for baby breakfast since they are so easy to hold. Of course, these breakfast crepes could get a little messy but a little mess never hurt anyone, right? Let’s call it sensory play. 🙂 Your baby or toddler will devour these deliciously sweet berry and yoghurt breakfast crepes!
Have you ever found ideas for baby breakfast and thought “no way I can make that”. Well, I’m here to tell you these sweeties are actually SUPER SUPER easy. I’ve heard stories of struggles with crepes but I’ve go a special and extra easy to remember recipe for crepes, the 2-2-2 recipe!
- 2 cups flour
- 2 cups milk
- 2 eggs
It’s basically the easiest baby breakfast recipe ever… You just whisk the 2 eggs into the 2 cups of milk then pour into your flour. We like to make a flour “volcano” to pour the milk mixture into (aka a well). It’s a good idea to refrigerate the crepe batter for about 30 minutes prior to cooking. This keeps the crepes nice and moist. You could even cover tightly and make the batter even further ahead of time.
The Naturally Sweet Yoghurt Filling
Most of you know that I avoid refined sugar at all costs. One of my favourite natural sweeteners is a fruit, specifically bananas. For the breakfast crepe yoghurt filling all you need to do is add the yoghurt and banana to a bowl and mash well. If you prefer, you can blend in a food processor or blender. I like as little clean up as possible so I usually mash in a bowl.
Assembling the Crepes
It’s not rocket science. Baby breakfast ideas should be easy. The only reason I am writing out this section is to give you one word of caution. DO NOT OVERFILL THE CREPES. Ok, do it if you like… but for little babies using their hands, less it more, or should I say less is less mess. The more filling you place inside the more filling that is going to squeeze out with your little baby hands. So I suggest a tablespoon. If you think they can work with more, go for it! If your little one is a rockstar with the fork or spoon, more is ok too.
Once you fill them up with the yogurt mixture, add a few finely chopped berries or smushier ones like raspberries (shown here). Top with a few berries for decoration and serve!
