2 Ingredient Bread rolls – just got better!

Our favourite bread of all time is, of course, my 2 ingredient bread rolls. These rolls were such a huge hit with my kids and all my Baby Led Feeding babies and toddlers. So, of course, I have been trying to find ways of creating recipes that can add value to the bread.

Enter Bunny Shaped Healthy Easy Bread Rolls

To make these delicious bunny bread rolls you need just a few simple ingredients flour, yoghurt, egg yolks, a little maple syrup, vanilla extract and a small bit of melted butter.

The sweetness in this recipe comes from a light glaze of maple syrup with cinnamon at the end. You can also leave this part out, especially if you’re giving these two smaller babies. However, this recipe really is low in sugar and as an occasional treat for your toddler, it is amazing!

No yeast bread – how does it rise?

I love making bread without yeast because it is quick and quick is good. Especially when you have a toddler hanging out of your legs and perhaps a baby attached to you for most of the day.

This easy bread recipe is made using self-raising flour, yoghurt, eggs and a small amount of maple syrup which are mixed together to form a dough.

The acid in the yogurt reacts with the agents in the self raising flour which help the dough to rise.

Can I use plain flour instead?

Yes absolutely, just add 2 teaspoons of baking powder to your mixture.

How to make vegan bread rolls

Swap yoghurt for your favourite dairy-free yoghurt, then the juice of 1/2 a lemon to the mixture. This will add the acid needed to help the bread rise and stay fluffy. You can also leave out the eggs as they are added for colour and more of a brioche-style bread.

How to store

Store in an airtight container at room temperature for up to 3 days. However, I mostly freeze once they have cooled which works great. They last longer and when defrosted are super fresh.

Can I give bread to my baby?

At 6 months your baby’s tummy is the size of their fist, so they need small amounts of food. It is important not to let them fill up on bread in replacement for other nutrients like veggies and fruits. However, a small amount of is perfectly ok. These little bunnies are a portion of perfect finger food for your baby. Serve with mashed banana for example make a super teatime recipe.

Ingredients

Method

  • Pre-heat oven to 180ºC.
  • Add the flour and yoghurt to a bowl, then separate the eggs and add the yolks to the mixture along with the maple syrup and vanilla.
  • Using a spatula, mix the dough until it comes together, then empty on a well-floured work surface and knead until it comes together into a smooth dough.
  • Cut the dough into 8 parts, then take 1 part and roll into a long sausage shape about 2.5cm thick.
  • Fold the dough in half then twist around again to form a bunny shape. To make the tail, roll the leftover piece into a circle and place it into the opening part of the base of the bunny.
  • Brush with a little melted butter and bake for 15-20 minutes until golden.
  • Remove from the oven and while the bunnies are still warm, mix together the maple syrup and cinnamon and brush over each one.
  • Leave to cool fully before serving.

Hi Aileen, I love your recipes. Would it be possible to also put up grams please? I find lots of different conversions for the cups so it’s a bit confusing sometimes. Thanks!
